Roast is where we either help or ruin it.
Roasting is heat applied over time, and the whole job is knowing when to stop. Early in the curve, acids and aromatics survive and the origin talks. Past first crack, sugars caramelize and body builds. Past second crack, roast flavor takes over and every coffee starts to taste like every other coffee.
Dark is not worse than light. Medium isn't boring. Each roast is meant to bring the flavor of the bean out and into your cup.
